We love potato skins but honestly, I have only eaten them out, I have never made them before now. They seemed to laborious to make. But the other evening, I had a craving for them and looked up a recipe. After doing a few tweaks to it, to cut down on prep time, we had delicious crispy potato skins in about 30 minutes! Pour yourself a nice cold pint and start making them, don't forget your good tunes!
Crispy Potato Skins
6 Small Russet Potatoes (about 3-4 inches diameter) scrubbed clean.
4 T. Soft butter
5 Slices Fried Bacon
11/2 C. Shredded Cheddar Cheese
2 Green Onions Chopped
1/2 C. Sour Cream
Preheat your oven to 400. Line a baking pan with foil, silicone mat or parchment paper. Poke your potatoes with a fork a couple of times and bake them in the microwave for about 10 minutes until they give when you squeeze them. Cut your potatoes in half and with a soup spoon, scoop out a little flesh from each potato and save it in a bowl. Turn your scooped out potatoes skin side up on the baking pan, rub each liberally with butter then salt and pepper the skins. Bake them in the oven for about 10 minutes. The perfect skins should be crispy on top and brown on the cut side when you turn it over. Remove skins from the oven, stuff your skins with crumbled bacon and cheese and you can choose to season up your leftover potato and add some of it back in or save it for something else. Either way add your bacon and cheese to your skins, bake for about 5 more minutes till bubbly and melted. Top with sour cream and green onions and enjoy!
