As a Postpartum Doula, I love bringing my new moms a basket of warm blueberry muffins and I think this recipe tops even my standard one! Can you imagine if you made this for a loved one or a new mom and then gave her the rest of the mix and recipe so she can mix them and have them in the oven in less than 10 minutes? She would love you FOREVER! I promise. But don't take my word for it, make some today!
Make Ahead Muffin Mix - Adapted from Sparkrecipes.com
Mix these dry ingredients very well in a airtight container. Makes 4 batches of muffins.
4 C. All Purpose Flour
4 C. Whole Wheat Flour
3 C. Sugar
3 tsp. Salt3 Tbsp. Baking Powder
3 tsp. Penzeys Cake Spice OR
3 tsp. Cinnamon
2 tsp. Nutmeg
To make the muffins. (Makes 12-14 muffins)
Preheat oven to 400, spray muffin tin or line with paper liners and then gently mix the following in a bowl. Don't overmix or you will have one tough muffin!
2 3/4 C. Muffin Mix (above)
1 C. Milk
1/2 C Oil (or you can sub in applesauce)
1/2-1 C. your favorite "add in's" (see list of options below)
Place mix in muffin cups and bake for about 16 minutes.
Fresh or Frozen berries
1/3 c. shredded carrot and 1/3 c. raisins
